Super Quick & Easy Sunday Night Meal Prep: Breakfast Edition - Bergen Moms Network

I totally over did it over the holidays.  So many delicious candy options in the kids Easter Basket.  My pants are getting tight.  When things get too busy I find myself reaching for the easiest breakfast which more often then not is not a healthy choice.  But mostly, I skip breakfast all together.  This reeks havoc on my metabolism and I enter that endless low energy temporary coffee pick me up.  The rest of the day I make terrible choices.  I need easy breakfast that keeps my energy up and points me in the right direction to make smart choices through the rest of the day.  These quick protein packed Mini Frittatas are so EASY and with just a few simple ingredients you have a healthy on-the-go breakfast.

Mini Frittatas

Chicken Apple Sausage & Cheddar

6 eggs

1-2 fully cooked chicken apple sausages

1/2- cheddar cheese shredded

salt & pepper to taste

Preheat Oven to 350 F degrees.  Grease muffin tin with cooking spray.  Lightly Scramble 6 eggs.  Put small amount of sausage and cheese into 10-12 of the tins.  Pour egg mixture over cheese and sausage until muffin tin is about 1/2 full.  Put in oven for approx 20 mins.

 

Mini Veggie Frittatas

I used :

6-7eggs

1 cup Arugula

4-5  basil leaves

10 grape tomatoes

1/4 cup fine chopped onion

1 finely chopped orange bell pepper

Preheat oven to 350 F degrees.  Use cooking spray to grease muffin tin.  Chop Arugula and basil.  Beat eggs and add all the veggies and mix together.  Pour into each muffin tin and fill approx half way.  Bake for 20-25 mins.  Let cool.

You can store these in the fridge and eat all week.  I usually bring two, my husband brings 3.  Heat for 20-30 seconds and enjoy!
