Leprechaun Treats | Bergen Moms Network

These were so easy and SO good. Kind of like a mix between caramel popcorn and a Rice Krispie treat. We made some bigger and some smaller so my daughter can use it as “leprechaun bait” 💚

Feel free to mix in other ingredients like chocolate chips or chopped up nuts!

Ingredients:
1/4 cup butter
1/3 cup brown sugar
2 cups mini marshmallows
2 mini bags or 1 full size bag of popcorn (we used kettle corn)
Marshmallows from lucky charms cereal
Green sprinkles

Instructions:
Pop your popcorn and set aside in a mixing bowl.
Over medium heat, melt butter, brown sugar and mini marshmallows until melted and gooey.
While this is happening, your child can sort the marshmallows from the candy – – perfect activity to keep little hands busy!
Pour mixture over popcorn and mix well to coat.
Pour marshmallows in with popcorn, generously pour green sprinkles, and mix altogether.
Grease hands (I literally rubbed a stick of butter on my daughter’s hands) to prevent sticking.
Roll mixture into bite size balls and place in muffin trays.
